Pickled Radishes

When your CSA bombards you with radishes, pickle them! These are easy to make and delicious in a taco, to replace the onion in a Gibson, or as a snack on their own.

Pickled Radishes

1 bunch radishes, washed and quartered
6-8 cloves garlic, crushed and halved or quartered
1 tsp peppercorns
1 tsp kosher salt
1 tsp sugar
2 cups white vinegar

Run pint mason jars through dishwasher. You’ll probably need about three.

In a saucepan over low heat, dissolve salt and sugar in vinegar. Meanwhile, combine radishes and garlic and spoon into jars. Add liquid and peppercorns (radishes should be covered). Seal, shake, and refrigerate 2-3 days before eating.
