These were inspired by a visit to Xi’an Famous Foods, a small chain of western Chinese restaurants originating in Flushing, Queens, where they serve a Savory Cumin Lamb Burger that the novelist Gary Shteyngart called “succulent” in the New York Times.   You might more closely approximate the Xi’an experience by adding more cumin.

Lamb Burgers

1 lb. ground lamb
2 T fresh mint leaves (chopped)
2 T fresh cilantro (chopped)
2 cloves garlic (chopped)
2 tsp dried oregano
1 tsp ground cumin
1/4 tsp ground allspice
1/2 tsp red pepper flakes (or more to taste)
1 tsp white wine vinegar
1 tsp molasses
Salt and fresh ground pepper to taste (but plenty of each)

Mix all ingredients.  Form into patties.  Grill.  Serve in small pitas.
