These are not particularly good for you, but they permit the illusion of healthy dining.  You can make them with any kind of large bean.  The ones in the picture are made with kidney beans.

Veggie Burgers

One 15.5 ounce can of beans, rinsed
One large egg, beaten
1/2 c. chopped cilantro
1/4 c. grated parmesan cheese
1 T. dijon mustard
1/2 tsp. salt
1/4 tsp. freshly ground pepper
Squeeze of lemon
3/4 c. toasted bread crumbs (homemade are best)

In a mixing bowl, mash the beans with a potato masher.  Fold in the egg.  Add the cilantro, parmesan, mustard, salt, pepper and lemon.  Mix thoroughly.  Fold in bread crumbs.  Let sit 5-10 minutes.  If mixture is too wet, add more bread crumbs, a little at a time.  Form into patties.  If cooking on the grill, you may want to put a little oil on the grill to prevent sticking.  Cook about 5 minutes per side, or until firm and cooked through.  Makes three or four burgers.
