We celebrated Memorial Day with fish tacos and these two salsas.

Red Salsa

One can whole plum tomatoes
One small onion, chopped
Two cloves garlic, peeled
1/4 cup cilantro, chopped
Juice of one lime
Up to one jalapeno, chopped fine (to taste)
Salt and freshly ground pepper (to taste)
Dash cayenne pepper (if you can stand it)

Combine all ingredients in a food processor and pulse a couple of times.  Voila.

Green Salsa

5-6 medium tomatillos, husked, washed and diced
3 avocados, peeled and diced
Juice of one lime
1/4 cup cilantro, chopped
1/4 cup finely chopped red onion
1 T olive oil
3 scallions, sliced thin
Salt and freshly ground pepper (to taste)
Up to one jalapeno, chopped fine (to taste)

Combine all ingredients.  If there’s a way to do this other than by hand, I haven’t figured it out.
